    Description:
If we do the "Download latest SP" for our Test server and then later do "Download latest SP" for Production, the "latest" Service Pack could have changed and we will be installing a different SP on Prod than we installed and tested on the Test server.

    Resolution:
The step 2. "Download latest SP" and the step 4. "Install SP" in the util sp menu are two distinct steps.

In order to assure that the "latest Service Pack" will remain the same during the time that you are testing the service pack on the Test server, you could do the "Download latest SP" on both servers at the same time, but do the "Install SP" on Production only if and when testing on the Test server shows that the Service Pack is OK.
